IN SEARCH OF GREENS?
In the spring and fall, you will find an expanding variety of Asian vegetables on our Market. We have experimented with them and have found them to be a wonderful source of greens during seasons when more traditional greens like collards and kale are not available (locally). Here is some background info we found that helps to explain how these vegetables are classified.. In fact, there is a great wealth of information on all vegetables at this site!

A banty is a miniature chicken with a very big attitude. These eggs would be graded as small but oh so tasty! Of course, as usual, we have to label them for pet consumption but we eat...no we relish eating these little sweeties...ourselves! Please note that when we list the banty eggs, it is with optimism that we do get that many before the co-op pickups. They are very limited in quantity.

No antibiotics, no hormones, soy free! Our free range chickens happily spend their days on acres of pasture with their cow, goat and miniature horse companions guarded by a gaggle of mongrel dogs that love their chickens. They are securely housed in a roosting house at night but the door is opened in the early morning so they can go be chickens at their own pace (hopefully) after they lay their eggs in the egg boxes. They happily dig in cow patties, roam the wetlands and just be chickens! Step back if you turn over a log or stump as it is a free for all to get the bugs!
These eggs are neither washed nor refrigerated in order to slow the aging process. Occasionally we wipe off mud and pen debris with a damp cloth just because it looks ugly! Because of this you may find “treasures” of mud, bits of hay and the occasional feather in your cartons. Once an egg is refrigerated it must remain refrigerated and the aging process has begun.
Washing takes the “bloom” off an egg which is nature’s way of preservation. Due to our “no wash” policy, we ask that everyone wash their eggs before use in their "pet's" meals. Fresh farm eggs easily last at least two weeks on the shelf and up to a month refrigerated.
Some folks may know these eggs as "Charley's Eggs" as our daughter was the original egg entrepreneur. Now at 19, gathering eggs could be catastrophic to her manicure and she has declared retirement and Mom has taken over.
Empty cartons are gladly accepted of any type! Dozens and 18 pack - Styrofoam, cardboard or plastic!
We are properly licensed by The Dept of Ag (#1280) but due to Florida Regs, we must label them as "pet consumption only" due to our NO WASH / NO GRADE policy. We eat them and have been doing so for over 12 years! These are the good eggs just like "back in the day"!
