We make luxurious flour-less, gluten free,organic chocolate cakes.

All our ingredients are certified organic and our butter and eggs come from organic certified small family farms. Chocolate like wine has specific qualities depending on microclimates the soil and the care of the farmers who produce it. Certain areas are called " Single origin chocolate " by opposition to blends from various countries where very large quantities and just OK quality are the rule in order to be sold as a mass consumer product.
Our premium chocolate is Rain-forest alliance certified and comes from the special area of Rio Arriba in Ecuador and from plantations growing the rare Arriba nacional chocolate tree varietal.
The Rio arriba chocolate is used by the best chocolatiers as a flavor chocolate as a way to improve standard chocolate. We chose it for its intensity, its dark toasted flavor and its natural complementarity to dairy.
